My Easy Date Cake Recipe

This was the date cake I tried this New Year. Every date cake recipe I looked at was asking for baking soda, which was out of stock in my kitchen at the time. But did that stop me from baking a delicious, super-moist date cake for my New Year tea table? Absolutely not.

So, here’s how I baked my date cake—without baking soda or any other luxury ingredients.

Here’s what you need:

  • 1 cup dates (pitted)
  • 1 cup fresh milk
  • ½ cup plain yogurt (thick, unsweetened)
  • ½ cup sugar (or less if dates are very sweet)
  • ¼ cup oil or melted butter
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp vanilla (optional)
  • ½ tsp cinnamon or cardamom (optional)

Instructions

  1. Blend dates
    Soak dates in fresh milk for 30 minutes.
    Blend into a smooth paste.
  2. Mix wet ingredients
    In a bowl, mix date paste, yogurt, sugar, melted butter/oil, and vanilla until smooth.
  1. Add dry ingredients
    Sift in flour, baking powder
    Gently mix until just combined (don’t overmix).
  2. Bake
    Pour into a greased cake pan. I added some peanuts at the top.
    Bake at 180°C (350°F) for 35–40 minutes, or until a toothpick comes out clean.

    Let cool 10–15 minutes before slicing.

The result? A beautifully moist, rich date cake that paired perfectly with a cup of hot tea and made my New Year feel even more special. Home made food is the best. This wonderful date cake reminded me that too.
