Mouthwatering Banana pudding

Nera loves pudding very much. So I thought in trying Banana pudding for the first time. It was an easy pudding to prepare with simple ingredients. And more over I fell in love with banana pudding due to its natural mild taste. And not too much sweetness.
I gathered ingredients listening to my favorite old Sinhala song and started the journey.

You can buy packet of vanilla pudding mixture packets. But I wanted to prepare vanilla pudding own. Add two cups of fresh milk and sugar stir well in medium heat continuously. While fresh milk is getting hot cornflour mixed with fresh milk need to be added. I had to pay extra attention when come to this phase, since cornflour thicken mix so quick. So stirring continued. Vanilla pudding is thick now. Then add vanilla and some butter, continue stir. Keep for cooling.


Whipping cream one cup with some icing sugar were beaten till it turned in to soft foam. Vanilla pudding was super cool within few minutes. Japan is super cool now . So we do not need refrigerators these days, everything outside is super cool. LOL!!

Vanilla pudding was beaten too till it turned in to soft foam. Yes, now it’s time to mix two mixtures as one. Wooh it’s super fluffy. Just forget to tell you, you can add some banana essence also. It is better not to use much artificial essence flavor. Because the natural taste of the ripen banana should not surpass. Now it is the assembling time.

Many use vanilla wafer as biscuit layer of banana pudding. But I couldn’t find it, so I used a substitution. When some ingredient is not with me I try my best for another which goes well with. This time also I tried some other milk biscuit. Biscuit layer ,vanilla pudding layer and banana layer. Same rhyme was repeated. It is your choice of layering.


Finally I decorated the topping with biscuit pieces. Keep the refrigerator before serving, actually I kept a portion out of the pudding in deep freezer. Just for checking. It was hard but for us it was soo good. Have you used deep freezer? What are the experiences? Any thought! Please share..
